Chef Leu’s innovative fare is best described as “Nouveau Texan”. Much of his menu’s ingenuity is inspired by fusion nuances reflective of his native Thai roots.
Chef maintains his own quarter–acre organic garden for herbs, tomatoes and peppers while numerous local farmers provide fruits and vegetables year-round. Club Charles also proudly serves Akaushi beef provided by Heartbrand Beef in Yoakum Texas, duck from Maple Leaf Farms, and Foie Gras from Hudson Valley Foie Gras.
Menu specials change seasonally based on the creative mood of Chef Leu and the seasonality and freshness of ingredients, including never frozen Sashimi Grade Fish shipped overnight from various locations throughout the world. Chef Leu’s Asian Fusion creations and traditional sushi always use the most consciously sourced organic ingredients.
We are fortunate to have access to superb local suppliers. Club Charles utilizes: Niman Ranch Natural Premium Aged Angus steaks and Broken Arrow Ranch in Ingram for, venison, axis, wild boar, elk and antelope.
